Our Latin forward menu with a few chef choice upgrades is the epitome of food for the people. For us, Food For the People means crafting plates that are accessible to all, consistently making your taste buds sing, and having a team behind the counter that you wish were your friends. No, really. You may know about our Colorado Springs Food Truck because of Diners, Drive-Ins, and Dives. You can see if it’s showing in your area at this link. Before Guy showed up at our Food Truck, Andres and Tricia Velez had a long history in building out their vision for the food truck.
Andres was born and raised in Northern New Jersey. He served 6 years as an Army Cook with 2 tours in Iraq. After completing his time in service, he attended and graduated Culinary school to pursue his dreams with primary culinary influences from Latin American and International cuisine.
Tricia was born and raised in Colorado Springs, enjoys cooking, baking and of course, dining out. Her parents have Asian and Polynesian cultural backgrounds which can be seen in various dishes prepared at the PigLatin Food Truck and brick-and-mortar space, PigLatin Cocina.
